Corn Fritters with Jalapenos, Maple and Chilli
Corn & Jalapeno Fritters
Serves 2 generously (6 fritters)
Whisk together 60g flour, 1 tsp baking powder, a pinch of salt, 2 eggs and 50ml milk.
Stir in 160g tinned sweetcorn (drained weight), a handful of chopped coriander, a handful of jalapenos, and 50g white cheddar, grated.
Fry for a couple of minutes each side in sunflower oil and serve with bacon, avocado, tabasco and a drizzle of maple syrup.
